My Eating Evolution: Egg Cup Recipe

One of the most important things in changing your relationship with food is finding new foods that taste good. I am going to share my healthy recipes and links to books and ingredients I use that have made staying healthy a breeze.



  • 8 Eggs

  • 1 Small Head of Broccoli

  • A Generous Splash of Almond or Coconut milk

  • 2 Braat Hanns spinach chicken sausages (casings removed)

  • 1 Small Onion

  • Crazy Janes mixed up salt to taste

  • Black pepper to taste

  • Optional: Tomatoes


Preheat oven to 350

In a large bowl Combine all ingredients

Pour in egg mixture into a pre-greased 12 muffin tin 3/4 of the way full

Bake for 20-25 minutes until eggs are puffed up.

Voila! You have an easy breakfast or post workout snack!

These are amazing reheated as well. I just pop one in the microwave for a minute.
